Kaiyo 7 Year Old "The Single" is an intriguing Japanese malt whisky that blends traditional craftsmanship with a unique "ocean maturation" process. The spirit is distilled on a Coffey still in Japan and aged for seven years in first-fill bourbon barrels. The defining characteristic of the Kaiyo brand is its final maturation stage: the casks are loaded onto a ship for a three-to-six-month voyage. The constant motion of the ocean and changes in air pressure are intended to accelerate the interaction between the whisky and the rare Mizunara oak (Japanese oak) casks used for the finish.
Spirit Description
This whisky presents a pale, straw-like gold appearance. The nose is exceptionally fragrant and typical of Mizunara influence, offering aromas of sandalwood, incense, and fresh tropical fruits like pineapple and melon, followed by a hint of grapefruit and green apple. On the palate, the texture is silky and medium-bodied, delivering flavors of honey, vanilla fudge, and coconut, which transition into a savory and spicy mid-palate featuring long pepper and ginger. The finish is medium-long and aromatic, characterized by fading spices, tangy orange, and a touch of sea spray. It is bottled at 48% ABV.
Food Pairing
The delicate, floral, and spicy notes of Kaiyo 7 Year make it a sophisticated partner for a variety of cuisines. It pairs beautifully with creamy desserts such as crème brûlée or a coconut panna cotta, which mirror the vanilla and tropical fruit notes of the spirit. For a savory option, try it with black cod miso or roasted pork belly; the Mizunara spice helps cut through the richness of the fat. Its "sea-aged" character also makes it a rare whisky that can stand up to pickled ginger or light, citrusy seafood dishes like scallop crudo.
