Tasting notes: Wild strawberry, fruit punch, rosehip, tropical fruit, grenadine, vanilla
Produced by Diego Samuel Bermudez at El Paraiso in El Tambo, Cauca, this Pink Bourbon is grown at 1,850-2,000 metres.
The coffee undergoes a 48-hour whole-cherry anaerobic fermentation, followed by 36 hours of anaerobic fermentation under pressure with selected tropical yeasts. A 70 C thermal shock stops fermentation before gentle drying.
