Introduction
Justin Cabernet Sauvignon is a widely acclaimed red wine from the Paso Robles subregion of the Central Coast in California, United States. Founded in 1981 by Justin Baldwin, the winery was a pioneer in the region, established with the goal of creating world-class Bordeaux style blends in a then-unproven territory. The winemaking philosophy emphasizes the unique limestone rich soils and dramatic diurnal temperature shifts of the estate, utilizing hand harvesting and small barrel aging to ensure high quality and varietal expression.
Wine Description
This wine typically displays a bright ruby red colour with moderate concentration. The nose is expressive and aromatic, offering notes of ripe red raspberry and black cherry layered with vanilla, toasted oak, and hints of dried herbs like oregano. On the palate, the wine is medium to full bodied and dry, featuring a supple texture with flavours of juicy red plum, blackcurrant, and spicy nuances of cinnamon and cocoa. It is characterized by its balanced structure, well integrated tannins, and a clean, savoury finish with a touch of cedar. The varietal composition is 100% Cabernet Sauvignon, and it typically features an ABV of 14.5%. While not certified organic, the estate employs sustainable farming practices. The optimal drinking window is generally within 1 to 5 years of the vintage to capture its vibrant fruit character.
