Jean-Pierre Robinot L'Opéra des Vins Les Années Folles 2023 is a pétillant naturel blending 60% Chenin Blanc with 40% Pineau d'Aunis sourced from organically farmed vineyards in the Jasnières area. The vines average 80 years old, rooted in calcareous clay soils. Jean-Pierre Robinot L'Opéra des Vins crafts this sparkling wine using méthode ancestrale—spontaneous fermentation begins in barrel with indigenous yeasts before bottling traps the remaining sugars for secondary fermentation. The wine ages approximately ten months on lees, bottled without fining, filtration, or added sulfites.
