From ilse
This espresso roast comes from Olgar Ortega, on his families farm, Villa Maria. The farm is in Sevilla, San Agustin sitting at 1750 MASL spanning 5 hectares. This is a separation of Caturra harvested in August of 2025. We find his coffee to be rich and sweet, with a full body. We taste plum and raisin as well as dark chocolate and the sweetness of molasses.
The Ortega-Gomez family has a rich history in coffee production spanning over sixty years in San Agustin. They grow various varieties, such as Sidra, Tabi, Typica, Yellow and Red Caturra, and Castillo. Olgar is the father of Esnaider Ortega, the founding member of Monkaaba who sparked the start of it all. While Esnaider has now been busy with the day to day operations of Monkaaba, Olgar and the rest of his family have taken on most of the work at their farm. We are so happy to deepen our purchasing with this incredible family.
Cherries are picked every three weeks at peak ripeness. The cherries are floated and then left to ferment in open tanks for 12 hours before being depulped and dry fermented for 36 hours in a tiled tank. The seeds are then rinsed 3 times and left to drain for 15 hours before being dried on raised beds for 20-25 days.
