The 2022 Idi Di Marzo Carnalis Appassimento is a rich and opulent red blend that utilizes the traditional appassimento method of partially drying grapes to concentrate their natural sugars and flavours. This vintage presents a deep ruby red colour with violet reflections. The bouquet is intensely aromatic, featuring generous notes of red cherry, redcurrant, and dried plum, accented by sophisticated hints of tobacco, coffee, and sweet spices. On the palate, it is full-bodied and velvety, showcasing a powerful fruit core balanced by supple tannins and a subtle, natural sweetness. Matured in stainless steel to preserve its vibrant fruit character, it offers a long, satisfying finish. It pairs exceptionally well with hearty tomato-based pasta, wood-fired pizza, or grilled Italian meats.
