The Habitation of Saint Etienne, modeled after the 19th-century sugar refinery ‘‘La Maugée’’ reflects a typical Martinique farm. Acquired in 1882 by Amédée Aubéry and later owned by the Simonnet family until the 1980s, it was revived in 1994 by Yves and José Hayot. The distillery, a precious example of 19thcentury industrial architecture in Martinique, is undergoing restoration and is listed in the French Historic Monuments.
After being transported to the distillery from the fields, the sugar canes undergo washing, cutting, and milling. The extracted juice, referred to as ‘‘vesou’’ undergoes filtration before entering fermentation vats. Subsequent distillation produces a ‘‘rhum de coulage’’ at approximately 73 degrees, which is then destined for resting and proofing before bottling (rhum agricole blanc) or aging in various kinds of oak casks (rhum vieux or très vieux).
Aged for 4-5 years in ex-Bourbon casks, "Black Sheriff" offers generous vanilla aromas which are enhanced by honey nuances delicately coated by very elegant woody notes. The delightfully round and sweet first impression in the mouth makes way for an explosion of fruity flavours, the distillate refusing to be outshone by the barrel. It's wonderful neat or on the rocks, but we can't help mixing up a lush, full flavored Rum Old Fashioned with this one as well.
