1. Introduction
The Honor Cava Rosé is a sparkling wine from Spain, produced in the Cava Designation of Origin (DO), which is largely centred in the Penedès region of Catalonia. The winery, Celler Jan Vidal, has a long tradition in viticulture, tracing its roots back half a century. The family behind the winery was originally a farming family in the heart of the Penedès region. Celler Jan Vidal emphasizes tradition, culture, and elegance in its winemaking. The family's philosophy focuses on constant improvement and minimizing the human footprint on their wines, using traditional methods and local grape varieties from their vineyards located in the Alt Penedès and Baix Penedès areas.
2. Wine Description
The Honor Cava Rosé has a cherry pink colour with bright purple reflections. It is crafted primarily from the indigenous Trepat grape variety. The aroma is varietal in character, fruity and complex, with a strong emphasis on red forest fruits, particularly strawberries and raspberries. On the palate, the wine is described as fresh, pleasant, and balanced, showing good structure with well-integrated carbonation. The Cava is made using the traditional method, with secondary fermentation occurring in the bottle. It is typically aged for a minimum of 9 months on the lees, and often aged for 12 months, which is beyond the DO Cava's minimum requirement. The wine has an alcohol by volume (ABV) of 11.5%. The winery, Celler Jan Vidal, is noted for using traditional methods and local varieties from their organic vineyards, indicating the wine is likely organic. The optimal drinking window is immediately, serving chilled between 8°C and 10°C.
