Hinomaru Whisky Signature 1823 is a commemorative single malt produced by Kiuchi Brewing and Distilling to mark the 200th anniversary of the company's founding. While Kiuchi is world-famous for its sake and Hitachino Nest Beer, this whisky showcases their expertise at the Yasato Distillery at the foot of Mount Tsukuba. The spirit is crafted using locally grown barley from the Hitachino region and is matured in a complex triple-cask arrangement of bourbon, sherry, and rum barrels. This expression is a cornerstone of their core range, representing the brand's shift from a historic sake brewery to a modern global player in the Japanese whisky scene.
Spirit Description
The whisky displays a bright golden hue in the glass. On the nose, it offers an elegant and striking bouquet where floral aromas of chamomile and saffron meet sweet notes of vanilla, toasted cereal, and peach. The palate is well-structured and refined, delivering layers of ripe apricot, gingerbread, and honeyed sweetness, balanced by a distinct mineral quality. Despite its youth, the influence of the three cask types provides a subtle complexity, with the rum barrels contributing a hint of tropical warmth.
Food Pairing
It pairs beautifully with umami-rich Japanese dishes such as miso-glazed black cod or mushroom risotto, where the whisky's mineral edge and light spice complement the savory flavors. For a more casual pairing, try it with grilled yakitori or tempura; the 48% ABV and crisp acidity help cut through the richness of the charcoal-grilled meat or fried batter.
