Henry of Pelham Speck Family Reserve Cabernet-Merlot 2020 is an exceptional, estate-grown red blend that represents the absolute pinnacle of cool-climate viticulture from a highly celebrated Ontario vintage. Crafted from low-yielding vines shovel-planted on the heavy clay and limestone soils of the Niagara Escarpment, this wine is meticulously aged for 20 months in French oak barrels. In the glass, it reveals a deep ruby hue accompanied by an aromatic bouquet of black raspberry, ripe cherries, cassis, and toasted cedar spice, layered with subtle hints of dark cocoa and anise. On the palate, it exhibits profound depth and structure, seamlessly balancing dense dark fruit conserve with vibrant acidity and firm, fine-grained tannins that provide a long, sophisticated, and beautifully sustained finish built for extensive cellaring.
Food Pairing: This robust red blend pairs magnificently with braised lamb shanks accented by rosemary and roasted garlic, grilled ribeye steak, or high-quality dark chocolate.
