Henry Of Pelham Cuvee Catharine Brut originates from Canada, specifically from the Niagara Peninsula region and the Short Hills Bench subregion in Ontario. The Speck brothers, Paul, Matt, and Daniel, helm the winery, which stands on land deeded to their ancestor in 1794. The estate follows a philosophy of sustainable stewardship, managing 300 contiguous acres of original farmland to maintain a consistent flavour profile and soil quality. This sparkling wine is named in memory of family matriarch Catharine Smith and is crafted as a Niagara expression of a time honoured wine style.
Wine Description
This premium sparkling wine presents a light straw colour and a medium body. The sensory profile is elegant and complex, featuring an aromatic nose of peach, pear, and warm ripe lemon, accented by toasty notes and a scent of toasted almond croissant. On the palate, the attack is linear yet generously mouth-filling, delivering fresh orchard fruit flavours of apple and citrus alongside hints of brioche, almond paste, and a light dusting of nutmeg. The finish is clean, long, and effervescent, characterized by lingering notes of wet stones and butter pastry.
Varietal Composition: A traditional blend of Chardonnay and Pinot Noir.
Stylistic Notes: The wine is hand picked and bottle fermented using the traditional method, seeing a lengthy aging period of up to 36 months on the lees to ensure a toasty and refined character.
ABV: Recorded at 12.0%.
Organic Status: The estate utilizes sustainable farming methods and is noted for its commitment to biological balance, though this bottling is specifically classified as sustainably and traditionally farmed.
Food Pairing
The bright acidity and toasty complexity of Cuvee Catharine Brut make it a versatile partner for both refined and savoury dishes. Suggested pairings include fresh oysters with lemon, salmon caviar, and creamy soft cheeses such as Brie. It also complements hearty fare like tomato based pastas, pizzas, and even grilled flank steak seasoned with Asian spices. For a classic match, pair it with fried chicken or salty appetizers to balance its zesty citrus notes.
