Allspice berries—known as pimento—are steeped into a rum base to make this style of spirit, and Hamilton's Ministry of Rum Collection version arrives at 30% ABV in a 750 ml bottle. The result carries warm allspice, pimento spice, a thread of rum sweetness and layered botanical notes.
That moderate strength keeps the liqueur approachable while leaving the concentrated spice character intact, which is what pimento dram needs to do its work in classic tiki drinks and traditional rum cocktails. It suits rum collections built with range in mind and back bars focused on old-school cocktail construction.
