Glenallachie 11 Year Old Palo Cortado Sherry Cask Finish is a single malt Scotch whisky crafted by Master Distiller Billy Walker at the GlenAllachie Distillery in Speyside. Initially matured in premium American oak ex-bourbon barrels, the spirit underwent a secondary maturation for over two years in rare Palo Cortado sherry puncheons sourced from Spain. This unique finishing process imparts a complex balance of rich dried fruits, nutty warmth, and delicate oak spices onto GlenAllachie’s signature honeyed spirit.
Food Pairing: Roasted duck breast with fig glaze, dark chocolate tarts, aged gouda, charcuterie with prosciutto and dried figs, and toasted nuts.
Tasting Notes : Deep mahogany in appearance with a rich, full-bodied mouthfeel that delivers a silky texture and warming depth.
Nose : Heather honey, dark chocolate, dried fruit, cinnamon spice, orange peel, and toasted almonds.
Palate : Rich cocoa, treacle, sultanas, mocha, sweet baking spices, marzipan, and subtle oak tannins.
Finish : Long and warming with lingering notes of dark chocolate, spiced fruit, orange zest, and roasted nuts.
Serve : Serve neat or with a few drops of pure spring water in a Glencairn glass.
