HoneyDew is a charmingly sweet and warming bourbon, infused with Texas wildflower honey to deliver a cozy, dessert-like experience. Its interplay of honeyed richness, creamy textures, and gentle spice makes it intuitive and comforting—an inviting sipper particularly suited for relaxing evenings or as a standout cocktail base.
Overview & Innovation
-
Producer: From Garrison Brothers Distillery in Hye, Texas—the first legal bourbon distillery in the state. It’s a small-batch, “grain-to-glass” producer known for bold, artisanal expressions.
-
Process: Matured in new American white oak barrels for about four years. Then, unique wooden cubes made from used bourbon barrels are soaked in Burleson’s Texas wildflower honey, and immersed in the bourbon for seven months. This imparts deep, authentic honey flavor—not just sweeteners.
-
ABV: 80 proof (40% ABV)—on the lighter side, emphasizing approachability.
Tasting Notes
Appearance
Amber hues rich like Texas sunshine—a warm, inviting color that reflects the honey infusion.
Nose
Sweeter than average farmhouse porch—aromas of caramel, vanilla, dark honey, elderberry, resin, with a subtle toasted oak spice.
Palate
Creamy and smooth: begins with caramel and honey, followed by gentle spice from cinnamon, clove, black pepper, cardamom, and apricot notes. Then, buttery richness akin to angel food cake or whipped cream emerges.
Finish
Sweet yet balanced, with lingering flavors of honey, fresh flowers, sultana raisins, toasted bread, white chocolate, and subtle espresso-chocolate warmth.
Reception & Character
-
From a reviewer: Almost like a honeyed Hot Toddy—comforting, “like drinking black tea and honey when you're sick.” The sweet, spicy balance makes it cozy, if not especially complex.
-
Reddit feedback: A “honey bomb” experience—thick mouthfeel, strong honey flavor, though a bit astringent and short on finish, especially after oxidation. Still, quite appealing for those who love sweetness.
