Garganuda is the Soave project of Andrea Fiorini Carbognin, developed in collaboration with Stefano Menti of the historic Giovanni Menti estate in Gambellara, Veneto. The name is a portmanteau of Garganega and "nuda" — Italian for naked — which describes the winemaking approach: nothing added, nothing taken away. The vineyards sit on volcanic soils in the Soave DOC zone, farmed biodynamically with sheep grazing between rows to manage cover crops without soil compression.
In the cellar, fermentation is spontaneous using only indigenous yeasts. The wine is unfined and unfiltered, aged in stainless steel, and bottled with minimal sulfur. This 2018 bottling is 100% Garganega, the native white grape of northeastern Veneto, which thrives on volcanic basalt and delivers its most mineral, structured expression when yields are kept low.
Garganega from volcanic soils shows a characteristic profile of white peach, citrus zest, and bitter almond, with a saline, stony undercurrent that comes directly from the basalt-heavy ground. The slightly hazy appearance is a result of the no-fining, no-filtration winemaking. High natural acidity keeps the wine taut and food-friendly.
