Fundador stands as a renowned brand of brandy originating from the Philippines, garnering acclaim for its Spanish-style brandies. The solera aging process, a distinctive technique frequently employed in the production of fortified wines like sherry, plays a pivotal role in crafting the brand's rich and intricate flavors. This method involves a tiered arrangement of barrels, with the oldest liquid residing in the bottom row, known as the "solera." As the brandy is drawn from the lower barrels for bottling, the casks undergo partial filling with younger liquid instead of complete emptying. This approach ensures a seamless continuity of flavors, enabling each barrel to contribute to the overall character of the blend. The utilization of sherry-soaked oak barrels becomes integral in imparting distinct flavors to the brandy over time, as the liquid interacts with the wood. Even after partial emptying, the barrels retain residual sherry qualities, infusing the aging brandy with the nuanced characteristics of older sherry and resulting in a delightful sweet richness in taste. This meticulous and intricate aging process adds layers of depth and complexity to the final product, creating a well-balanced fusion of various vintages and flavors that characterizes Fundador brandy.
