Lot 150 marks a pivotal shift in standard production techniques. It breaks all the rules. Guillermo Sauza fermented the agave mosto alongside the crushed plant fibers for this specific run. This traditional bagazo fermentation technique locks in intense botanical compounds, generating a massive wave of raw agave sugar that ordinary distillation leaves behind. You get an unfiltered snapshot of the Valley's fertile soil.
True purists hunt for bottles that showcase honest agricultural roots. Crafted entirely within the stone walls of NOM 1493, this unadulterated spirit relies strictly on heavy tahona extraction and deep, mineral-rich spring water. Imperfections can't hide anywhere here. Double distillation in copper pots hones the liquid into a sharp, focused expression of Jalisco terrain. The resulting profile carries an unexpected weight that lingers on the tongue.
- Tahona-crushed valley agaves
