El Dorado 12 Year Old Southern Ontario Sippers & BSW Liquor Single Cask Rum is a monumental, ultra-premium single cask expression of Demerara rum that stands as a true holy grail for rum purists and serious spirits collectors alike. Specially curated as a private selection for the Southern Ontario Sippers enthusiast group and BSW Liquor, this limited-edition release showcases the profound architectural depth of Guyana's historic distilling legacy. Matured for 12 long years in the intense, tropical microclimate of Guyana, this single cask choice wonderfully displays the unique characteristics derived from the distillery's legendary array of heritage stills—including the historic French Savalle Still, the metal Diamond Coffey Still, the ancient Port Mourant Double Wooden Pot Still, and the iconic Versailles Single Wooden Pot Still. Bottled non-chill filtered and completely unaltered, this rare bottling beautifully marries the rich, unctuous weight of historic greenheart wood pot stills with the refined, ester-forward complexity of historic column stills, delivering an elite, deeply complex snapshot of pure Demerara craftsmanship.
Food Pairing: Pairs spectacularly with rich duck breast in a cherry reduction, sticky glazed BBQ pork ribs, extra-mature English cheddar or Stilton blue cheese, and a premium artisanal dark chocolate torte.
Tasting Notes : A rich, dark mahogany-bronze liquid appearance with deep copper core highlights, exhibiting a luxuriously heavy, full-bodied, and velvety mouthfeel that coats the palate with exquisite viscosity.
Nose : High-toned, sophisticated, and deeply complex, opening with dominant aromas of rich dried tropical fruits like mango, pineapple, and papaya, seamlessly layered with bright hints of fresh citrus peel, warm toffee, dark molasses, and an elegant background of sweet cigar wrapper tobacco.
Palate : Robust, structured, and intensely flavor-forward on the entry, delivering beautifully rounded notes of dark stone fruit, stewed raisins, and rich brown sugar, which gracefully expand mid-palate into deep dark chocolate, roasted coffee beans, warm baking spices, and a touch of antique oak tannins.
Finish : Long, highly warming, and incredibly persistent, leaving a dry yet sweet, satisfying fade filled with lingering trails of caramelized brown sugar, exotic wood spice, and a faint echo of sweet tobacco leaf.
Serve : Best enjoyed poured neat at room temperature in a traditional Glencairn or specialized rum tasting glass to allow the complex historic still esters to fully open up, or slowly savored with a few drops of pure spring water.
