Domaine in Black Evolution d’Octobre is a natural wine crafted by Lambert Spielmann in Alsace, France. Predominantly Pinot Gris, blended thoughtfully with Pinot Noir and Pinot Blanc, it undergoes gentle maceration, fermenting spontaneously with native yeasts and aging through winter in neutral vessels. Sourced from vineyards planted on clay-limestone soils, grapes thrive in Alsace's cool climate, developing striking aromatic complexity and freshness. Minimal-intervention winemaking allows for an authentic expression of terroir, resulting in a balanced, characterful wine that vividly conveys the nuances of its varietal composition and unique Alsatian landscape.
