Domaine Fourrier Gevrey-Chambertin 1er Cru Combe aux Moines 2023 is a standout Premier Cru red Burgundy crafted by Jean-Marie Fourrier from old Pinot Noir vines planted as far back as 1928 in the elevated, cool-climate 'Combe aux Moines' climat. Sourced from rocky limestone soils, it is vinified with minimal intervention, a light hand on extraction, and aging in low-percentage new oak to safeguard the pristine purity of the fruit and distinct sense of place. In the glass, it shows a rich, radiant purple hue alongside dark fruit aromas of wild dark currant, poached plum, and crushed herbs underpinned by damp earth and a subtle pepperiness. On the palate, it is medium-to-full-bodied with immense energy, glossy textures, and a structured, mineral-driven core that flows into a long, focused finish.
Food Pairing: Pairs superbly with roasted duck breast, prime ribeye steak, roasted rack of lamb, wild mushroom ragù, squab, and semi-aged cheeses like Époisses.
