Domaine Derain is based in Saint-Aubin on the Côte de Beaune, where Dominique Derain acquired his estate in 1988. The wines are certified biodynamic by Ecocert and have been so since 1989, with Julien Altaber and Carole Schwab of Domaine Sextant taking over the plots. The cuvée is made from Chardonnay (90%) from a young vineyard and Pinot Blanc (10%). The parcel, planted in 2013 on the lieu-dit "La Corvée Aux Moines" adjoining the Puligny-Montrachet appellation, is lightly foot-crushed then directly pressed, cold-settled, spontaneously fermented with indigenous yeasts, and aged six months on lees in tank.
