Decadent Drams Caol Ila 19 Year Old 2007 is an exceptional single malt Scotch whisky from Caol Ila Distillery on Scotland's rugged Isle of Islay. Distilled in 2007 and bottled in 2026 by independent bottler Decadent Drinks, this limited-edition expression spent 19 years maturing in a refill ex-bourbon hogshead before being bottled at natural cask strength of 50.1% ABV. With only 218 bottles produced, it captures Caol Ila's classic coastal personality, allowing pristine peat smoke, maritime salinity, citrus brightness and elegant waxy textures to shine without overwhelming oak influence.
Food Pairing: Pairs beautifully with smoked salmon, freshly shucked oysters, grilled prawns, seared scallops and aged cheddar. Smoked almonds, olive tapenade and lemon-infused seafood dishes complement its maritime, smoky character.
Tasting Notes: A beautifully focused Islay single malt showcasing clean coastal peat smoke, seawater, citrus, savoury olive notes and subtle waxiness. Its refill-cask maturation allows the distillery's distinctive spirit character to remain at the forefront.
Nose: Fresh sea spray, bright citrus juice, coastal minerality and precise, clean peat smoke, followed by hints of lemon zest and seaweed.
Palate: Silky olive oil, brine, green olives, soft waxes and dry, ashy peat smoke, balanced by citrus freshness and delicate maritime complexity.
Finish: Long and gently smoky, with lingering mineral salts, lemon peel, savoury olive notes and a touch of dry coastal ash.
