David & Nadia Aristargos
This Swartland field blend combines Chenin Blanc with eight Rhône-inspired varieties, sourced from old bush vines across diverse soils. The producer, David & Nadia, champions organic farming and minimal intervention.
Grapes are whole-bunch pressed and naturally fermented, then matured for 11 months in old French oak, with select parcels aged in concrete and large foudres for added nuance. Skin contact on Semillon and Colombar enhances texture and aromatic depth.
- Opens with aromas of quince, citrus peel and chamomile, underpinned by subtle almond and white spice.
- The palate is medium-bodied and textural, showing vibrant acidity, stone fruit and saline minerality balanced by fine phenolics.
- The finish is long and focused, with lingering notes of flint and delicate herbal complexity.
Ideal with seafood and fish dishes, creamy poultry recipes or vegetarian plates featuring root vegetables and grains.
