Dancing Goat Distillery quietly operates out of Cambridge, Wisconsin, executing remarkably intricate experiments within the modern American whiskey landscape. This release forces an aggressively spiced mashbill to reckon with the uncompromising influence of virgin French oak. The result commands your immediate attention. Aged for five years and bottled at a formidable 122 proof, the spirit synthesizes intense grain character with profound structural elegance. Most producers would avoid marrying a 44-percent rye bourbon with 36-month cured European barriques, fearing the aggressive wood might wholly obfuscate the base distillate. Dancing Goat leaned fiercely into it.
Maturation in ancient European wood fundamentally rewrites the traditional bourbon trajectory. Instead of anticipated caramel dominance, these staves impart rigid tannins alongside a striking, vibrant citrus lift. The blenders meticulously added water daily, painstakingly coaxing the barrel until it achieved an optimal equilibrium between sheer muscularity and delicate finesse. You get strength without the punishment. Wisconsin aging imparts undeniably distinctive elements.
Key production specifications highlight this craftsmanship:
- Mashbill: 51% Corn, 44% Rye, 5% Malted Barley
- Maturation: 5 years total age
- Cask: 36-month cured virgin French oak barrique
Such a gargantuan proof inevitably demands deliberate patience once poured. Give the amber liquid a few moments to acclimate to the open air. This pivotal resting phase permits volatile ethanol vapors to properly blow off, ultimately unmasking a kaleidoscopic array of dark compote and roasted tree nuts hiding below. The complexity immediately arrests the senses. Midwestern whiskey proudly flexes its pedigree.
