Introduction
This red wine originates from Italy, specifically from the Cerasuolo di Vittoria Classico DOCG region in southeastern Sicily. Azienda Agricola COS was founded in 1980 by three friends—Giambattista Cilia, Cirino Strano, and Giusto Occhipinti—whose last initials form the winery's name. The winery is a pioneer of 'pre-industrial' and natural winemaking in Sicily, focusing on traditional methods such as spontaneous fermentation with indigenous yeasts and the use of ancient-style aging vessels like clay amphorae and large Slavonian oak barrels.
Wine Description
The COS Cerasuolo di Vittoria Classico 2021 is a medium intensity ruby red wine with garnet highlights. The nose is hauntedly expressive, offering a complex bouquet of wild red cherries, pomegranate, and blackberries, layered with savory notes of terracotta, fennel, dried flowers, and a distinct sea-salt minerality. On the palate, the wine is medium-bodied and serene, featuring silky tannins and vibrant, citrus-laced acidity that balances flavors of black raspberry, wild herbs, and sweet smoke. It is characterized by its remarkable energy and textured finesse, leading to a long, classically dry finish with a whisper of spice and earth. This blend consists of 60% Nero d'Avola and 40% Frappato, with an ABV of 12.5%. The wine is certified organic and follows biodynamic principles. The optimal drinking window for this vintage is from 2024 through 2035+.
