The collaboration between Collective Arts Brewing (Hamilton, ON) and Dugges Bryggeri (Gothenburg, Sweden) is a standout entry in the 2022 Origin of Darkness series. This annual series is famous for pairing Collective Arts with world-class breweries to push the boundaries of barrel-aged stouts. For the Dugges edition, they took inspiration from Swedish confectionery, creating a decadent Chocolate, Raspberry, and Mint Imperial Stout that drinks like a liquid gourmet truffle.
Beer Description
This Imperial Stout pours a pitch-black, viscous liquid with a thin, mocha-colored head that leaves a moderate oily lace on the glass.
Aroma: It features a complex and layered nose. It leads with a sharp, cooling burst of peppermint, followed by the tart sweetness of jammy raspberries. Underneath, there is a rich foundation of dark chocolate and the subtle, boozy warmth of bourbon-soaked oak.
Palate: On the tongue, it is full-bodied and velvety. The flavor begins with intense dark chocolate fudge and sweet raspberry purée. The mint provides a refreshing, tingly contrast that prevents the heavy sweetness from becoming cloying. The finish reveals the barrel aging, with notes of vanilla, charred oak, and a lingering bourbon warmth.
Profile: It has a massive ABV of 11.6% and very low bitterness, as the structure is built on malt density and the interplay of adjuncts (mint, chocolate, and fruit).
Technical Notes: This is a Bourbon Barrel-Aged Imperial Stout. After aging in bourbon barrels to develop depth and vanilla notes, it was conditioned on large amounts of dark chocolate and raspberry purée, then finished with just the right amount of peppermint to create its signature "after-dinner mint" profile.
