Giulio Cocchi, established in 1891 in Asti, Italy, has a rich history of crafting fine aromatized wines and aperitifs. Renowned for its dedication to traditional methods and quality, the winery introduced the Cocchi Vermouth di Torino Extra Dry in 2021 to commemorate its 130th anniversary.
This vermouth presents a pale straw hue and offers fresh green apple and white flower aromas. The palate is zippy and remarkably light, with mouthwatering lemon peel and the barest hints of fresh herbs and peppermint on the super-clean, brisk exhale.
Cocchi Extra Dry Vermouth is an excellent choice for classic cocktails like the Martini, where its crispness and herbal notes enhance the drink's complexity. It also pairs well with seafood dishes, such as oysters or grilled fish, and can be enjoyed chilled on its own as a refreshing aperitif. Together, these pairings highlight the vermouth’s depth and character.
The introduction of this Extra Dry Vermouth reflects Cocchi's commitment to innovation while honoring its storied past. The 2021 release has been well-received, with Wine Enthusiast awarding it 97 points, noting its "zippy and remarkably light" profile.
