The Partida family distills deep in Zapotitlán de Vadillo, completely isolated from mainstream industrial agave production. They craft this destilado exactly as they did five generations ago. Macario Partida focuses on the rare Brocha varietal, an endemic subspecies of Agave angustifolia thriving in coarse volcanic earth. He severs the quiote and leaves the living plant resting in the ground for three extra years to aggressively concentrate its residual sugars. This method requires immense patience. Yet the profound, highly textured spirit ultimately validates that extensive delay.
Filipino-style stills carved directly from hollowed tree trunks dictate the final, crucial distillation phase. This rustic wooden equipment cooperates with wild airborne yeasts to generate immense earthly complexities. Fermentation occurs naturally inside massive stone vats filled with pure mountain spring water. Bottled at high proof, this pure, uncertified mezcal retains the heavy volatile oils routinely stripped away by aggressive modern filtration techniques. The liquid feels strikingly visceral. You experience the rugged Jalisco terrain itself rather than a heavily manipulated commercial product.
