Introduction
Cavit Pinot Noir is a red wine from Italy, produced in the Lombardy region under the Provincia di Pavia IGT designation. It is a standout selection from the Cavit Collection, a brand produced by the Cantina Viticoltori del Trentino, a consortium of cooperatives renowned for elevating the standard of Italian wines since 1950. While Cavit’s headquarters are in Trentino, this specific wine is sourced from the Oltrepò Pavese area, known as the "Pinot Noir capital of Italy." The wine is a classic expression of this distinct terroir, where vines thrive on sloping hillsides featuring calcareous clay soils that are ideal for producing elegant, fruit-forward Pinot Noir.
Wine Description
The wine displays a youthful, vibrant ruby red colour with violet hues, sometimes leaning towards a bright purple at the rim. The aromatic profile is inviting and delicate, full of red berry fruits, with distinct notes of black cherry, raspberry, and crushed strawberry, accompanied by subtle hints of earth and polished wood. The varietal composition is 100% Pinot Noir. It is a medium-bodied, silky, and approachable wine. The palate is fresh, smooth, and dry, with a well-defined fruit character that offers satisfying depth without heaviness. Stylistically, it is a harmonious wine, balancing the natural acidity of the grape with soft, supple tannins. The wine is matured for a short period in oak barrels to refine its texture before final finishing in stainless steel.
Food Pairing
This wine is a superb match for grilled lamb chops, roasted poultry, or a classic mushroom risotto. Suggested pairings also include grilled salmon, soft cheeses, tomato-based pasta dishes, or a savory lentil stew.
