Uncompromising, historic, and fiercely pure. Caballito Cerrero’s Blanco Ensamble blends estate Blue Weber (Azul) with rare Chato agave, distilled at Fábrica Santa Rita in Amatitán. It bottles at 52.8% ABV for a vivid, high-definition profile that honors the family’s pre-CRT methods and terroir. The spirit is legally “Destilado de Agave,” yet it drinks like old-school Tequila—electric agave, mineral drive, and zero cosmetic sweetness. Texture feels lean yet powerful; flavors surge, never smear, thanks to slow brick-oven cooking, open-air stainless fermentation, and copper/stainless pot distillation.
