Unlike conventional blue agave expressions, CHATO is crafted from wild and semi-wild agave varieties, creating a flavor profile that's distinctly more rustic, complex, and terroir-driven. Bottled at still strength—directly from the distillation without dilution—this "Unicorn" preserves the full force and character of traditional agave distilling. The result is an unapologetically bold spirit that demands respect and rewards the adventurous.
Expect powerful notes of roasted wild agave, earthy minerality, green herbs, white pepper, smoke, and wild vegetation, all amplified by the elevated proof. The wild agave character shines through with a savory, almost meaty quality alongside bright citrus and vegetal notes. Complexity and intensity in perfect harmony.
The "Unicorn" designation isn't just marketing—it's a promise. Still strength wild agave spirits are exceptionally uncommon, making this bottling a true collector's prize. This expression represents the intersection of traditional craftsmanship, wild terroir, and uncompromising authenticity—a taste of agave spirit-making as it has been practiced for centuries, now available in its most concentrated form.
