Produced by Cascina Valle Asinari, a historic estate in San Marzano Oliveto, this wine is crafted from 100% Barbera grapes cultivated on sandy and silty soils. The winery employs traditional methods, including fermentation in cement tanks with indigenous yeasts and aging in large Slavonian oak casks, to create a wine that reflects the character of its terroir.
Tasting Notes:
Colour: Deep ruby red with violet reflections.
Aroma: The nose is rich and complex, offering notes of ripe red fruits such as cherry and raspberry, complemented by hints of underbrush, licorice, and a mentholated finish.
Palate: On the palate, the wine is tense and dense, featuring saline tannins and a finish that echoes the underbrush notes.
Body and Finish: Medium-bodied with a well-structured profile, the wine exhibits a pleasant acidity that balances its richness, leading to an elegant and persistent finish.
Food Pairing:
This Barbera d’Asti pairs excellently with hearty dishes such as pasta with meat sauces, risottos, and roasted meats. Its acidity and structure complement the richness of these foods, enhancing the overall dining experience.
