Most "finishes" are a brief handshake between spirit and wood; this is a twenty-eight-month conversation. The Bardstown Bourbon Company Distillery Reserve "Normandie" represents a high-stakes collaboration with the legendary Christian Drouin house in France. While many producers rush the finishing process, the blending team here took a massive risk, allowing a stock of 12- and 13-year-old Indiana bourbon to rest in these 59-gallon apple brandy casks for over two years.
The result is a complete metamorphosis of the original spirit. The Calvados influence doesn't just sit on top; it has seeped into the grain, replacing the traditional caramel-corn profile with a sophisticated, vinous architecture. To ensure the whiskey didn't become too soft, the liquid was then transferred again into new, medium-toast American oak barrels for a final four-month structural tighten-up.
Bottled at 104.2 proof, this is an elegant collision of Kentucky (well, Indiana via Kentucky) and Normandy. It is dense, pastry-forward, and remarkably distinct. You are tasting a specific agricultural exchange: the corn of the Midwest meeting the orchards of the Pays d'Auge.
