The Bardstown Bourbon Company Distillery Reserve Cathedral is a truly exceptional, small-batch bourbon from their innovative finishing program. This highly sought-after expression takes high-rye Kentucky Straight Bourbon that's already aged for a significant time—usually six to eight years—and gives it a pivotal second maturation. The secondary aging occurs in new, heavily toasted French oak barrels, hence the "Cathedral" designation. That barrel choice is crucial; French oak imparts a unique character distinct from traditional American oak.
The heavy toasting process caramelizes the sugars in the wood, resulting in intense flavors. This bourbon is bottled at a bold 110 proof, maintaining the integrity and intensity of the finishing process. The result is a layered, complex, and savory spirit that beautifully balances the bourbon's spicy heat with the dark, elegant notes of the French oak. It's a fantastic showcase of modern distilling ingenuity meeting classic bourbon tradition.
