Barbancourt was founded in 1862 by Dupre Barbancourt, a French national who brought with him the distillation techniques of the Cognac region — specifically, double distillation in copper pot stills and aging in French oak — and applied them to Haitian sugarcane. What makes Barbancourt fundamentally different from most Caribbean rum is the base ingredient: while the majority of the world's rum is made from molasses (a byproduct of sugar production), Barbancourt is made from pure fresh sugar cane juice, pressed directly from hand-cut, locally grown Haitian cane and delivered to the distillery immediately for fermentation. This agricole-style approach — more common in Martinique and Guadeloupe than in the Caribbean's English-speaking islands — produces a greener, more complex, more aromatic base spirit.
The 5 Star Réserve Spéciale is the distillery's signature expression, aged eight full years in Limousin oak — the same French oak used for Cognac maturation — rather than the American oak more commonly used in rum production.
