Fish & Thau is a tribute to life’s simple and salty pleasures. Born between vineyards and lagoon in the heart of the Picpoul de Pinet AOP, this cuvée expresses the true essence of the Mediterranean coast – fresh, crisp, and unapologetically authentic. Its lively acidity, saline tension, and expressive aromas make it the perfect wine to pair with oysters, grilled fish, or vibrant Asian dishes. Inspired by the shimmering blues of the Thau Lagoon and the bounty of its seafood, Fish & Thau captures a lifestyle – relaxed, stylish, and effortlessly sincere. This wine offers a captivating richness, unfolding layers of ripe stone fruit and tropical notes, gently laced with citrus zest and a touch of sea salt. The bouquet reveals a mineral depth, with hints of ocean breeze and delicate florals that linger gracefully on the finish. Medium-bodied and lifted by vibrant acidity, it remains fresh, expressive, and full of energy from start to finish.
- Serve chilled at 8°C (46°F) alongside a platter of freshly shucked oysters, grilled sea bass with lemon herb butter, or creamy burrata with citrus zest and olive oil. Its crisp energy and savory edge make it the perfect match for vibrant coastal cuisine and sun-drenched Mediterranean flavors.
