Introduction
Appleton Estate 8 Year Old Double Cask is a limited edition, premium Jamaican rum that represents a significant milestone as the distillery's first-ever cask-finished release. Launched in June 2024 as a Canadian exclusive, only 13,000 bottles were produced. The expression was crafted by legendary Master Blender Dr. Joy Spence to unite the tropical heritage of Jamaica's Nassau Valley with the "misty" traditions of the Scottish Highlands.
Spirit Description
This rum is a blend of pot and column still distillates, meticulously managed from "cane to cup" at the Appleton Estate, which has been distilling since 1749. It is matured for eight years in the tropical Jamaican climate—where rum ages approximately three times faster than in cooler regions—before undergoing a unique finishing period.
Maturation: Aged for a minimum of eight years in Number One American white oak bourbon barrels, then finished in barrels that previously held Dr. Joy Spence's favourite 18 Year Old Speyside Single Malt Scotch Whisky.
Colour: Brilliant honeyed bronze with a subtle green ring of ageing.
Aroma: A bouquet of spiced fruit, dried raisins, and vanilla, balanced by the distillery’s signature orange peel note and a hint of honey.
Palate: Smooth and rich with layers of caramel, orange, honeyed nuts, and sweet vanilla. Some tasters note hints of peat, scotch tones, and leather from the single malt cask.
Finish: Lengthy and exceptionally smooth, featuring lingering notes of holiday spice and warm oak.
ABV: Bottled at 43% ABV.
Accolades
While a newer limited release, the foundational Appleton Estate 8 Year Old Reserve won a Gold Medal at the 2024 San Francisco World Spirits Competition. The Double Cask edition has been praised by collectors as a "rare collectable" that punches well above its price point, particularly for its innovative fusion of Jamaican funk and Speyside elegance.

The complex interplay of fruit, spice, and scotch-influenced oak makes this rum highly versatile for both neat sipping and refined cocktails.
Savoury: Pair with rich, fatty foods like smoked brisket or glazed pork belly to complement the rum's oak and caramel notes.
Sweet: The honey and raisin profile pairs excellently with desserts like banana-infused tarts, dark chocolate, or pecan pie.
Signature Serve: The "Obair Fashioned"—2 oz of Double Cask rum, 0.25 oz brown sugar syrup, and 3 dashes of orange bitters, stirred and served on the rocks with an orange twist.
Sipping: It is widely recommended to be enjoyed neat or on the rocks to fully appreciate the Speyside finish.
