Almatitan pushes the boundaries of agave distillation by revisiting ancestral techniques at Destiladora La Roca. This single-barrel reposado undergoes open-air fermentation with the crushed bagaso fibers left intact, coaxing out an unusual depth of vegetal richness. The resulting spirit rests in Kentucky bourbon barrels to soften its sharp edges. It captures the raw terroir. The elevated proof amplifies the nuances of organic Blue Weber agave and doesn’t mask the plant’s earthy foundation.
Standard tequila production often discards the fibrous bagaso before fermentation to speed up the timeline. Almatitan chooses a more demanding path. By leaving those fibers in the open-air tanks, the mash develops a robust, textural complexity that conventional processing simply cannot replicate. The barrel maturation then weaves delicate oak influence into that intensely green, fibrous core. It’s an additive-free expression uncompromisingly focused on the agave plant.
