400 Conejos Joven is made from espadín agave in Oaxaca and bottled at 40% ABV (80 proof) in a 1.75 L format. It pours crystalline and colorless with shiny silver nuances and noticeable body. The aroma leads with campfire and ash, backed by faint ripe fruit and light herbal notes, while the palate stays soft, layering fresh wood against the sweetness of cooked agave before a pleasant, smoky finish.
The name comes from Mesoamerican tradition, where priests alone were thought to open a channel to the gods, doing so through the ritual drinking of agave beverages. Those drink deities were known collectively in Nahuatl as centzon-totochin, the 400 rabbits, with 400 standing in for "innumerable" and "uncountable." That spirit is said to live on in the bottle, and its smooth, lightly smoky character suits drinkers just starting out with mezcal.
